Course I – Amuse / Opening

Dish:
Hamachi crudo, yuzu kosho, cucumber pearls, shiso oil

Wine:
Fratelli Cosmo Prosecco DOC
Bright acidity and fine bubbles awaken the palate and highlight the citrus notes.

Course II – Appetizer

Dish:
Burrata with heirloom tomatoes, basil blossom, extra-virgin olive oil, aged balsamic

Wine:
St. Martin Sancerre Cuvée
Fresh minerality complements the creamy texture and herbal notes.

Course III – Fish Course

Dish:
Seared scallops, cauliflower purée, brown butter, lemon zest, trout roe

Wine:
J. Lohr Chardonnay
Balanced oak and bright minerality elevate the natural sweetness of the scallops.

Course IV – Main Course

Dish:
Herb-crusted lamb loin, parsnip purée, roasted baby carrots, rosemary jus

Wine:
Meadowcroft Pinot Noir (California)
Elegant tannins and red-fruit notes enhance the richness of the lamb.

Course V – Dessert

Dish:
Dark chocolate torte, espresso ganache, sea salt, raspberry coulis

Wine:
Dow’s 20-Year Tawny Port
Nutty, cocoa-driven sweetness mirrors the chocolate and espresso flavors.
